What are the UK temperature rules?
Under UK food safety law, chilled food must be kept at or below 8°C. Most businesses set fridges to 5°C or below as a working target so a busy door or a defrost cycle doesn't push stock past the legal limit. Freezers should run at −18°C or colder. Bacteria multiply fastest between roughly 5°C and 63°C — keeping your fridges and freezers in range is the simplest way to stay out of that zone.
The Food Standards Agency's Safer Food, Better Business (SFBB) pack asks you to check and record fridge and freezer temperatures at the start and end of each day, with a corrective action note whenever something's out of range. Paper logs like this one are fine for an EHO inspection, as long as they're legible, consistent, and genuinely filled in.
