What HACCP actually is
HACCP (Hazard Analysis and Critical Control Points) is the framework every UK food business is legally required to base its food safety system on. For most small businesses the FSA's Safer Food, Better Business (SFBB) pack is a valid HACCP-based system. This worksheet is useful if you need to document the reasoning behind your controls — particularly around new menu items, a new process, or any step that SFBB doesn't cover cleanly.
