How the hygiene rating is scored
The Food Hygiene Rating Scheme (FHRS) in England, Wales and Northern Ireland grades businesses 0–5 based on three areas: how hygienically food is handled, the condition of the structure of the premises, and how confident the inspector is that management will keep it that way. Scotland uses a simpler Pass / Improvement Required system.
Confidence in management is the one most businesses underestimate — it's where records, training evidence, HACCP, and allergen management live. Strong records won't cover for a major structural problem — if one area is graded as a serious failure it caps the overall rating — but they'll hold your score up through minor issues.
